Coco Mellows (Coconut Laddu) a unique eNalabaag Special sweet recipe and good for all type of functions and an instant one. This sweet is made with Coconut and Sugar. Very easy to make and healthy and yummy too.

Making of Coco Mellows
Main Ingredients:
Coconut - 1 cup
Sugar - 1/2 cups
Water 1/2 cup
Ghee - 3 tbsp
Cardamom - 3
Saffron (optional)
Badam 6
Cashew 11
Coconut grinding
Slice the coconut from the shell
Remove the hard parts from the coconut slice and cut roughly
Put it in the mixer grinder and blend the coconuts and keep it aside
Nuts powder process
Add 6 separated cashews, 6 badam and 3 cardamom to a mixer grinder
Grind it to smooth powder and keep it aide
Cashew Roast
Take 5 separated cashews
Take a kadai and heat 1 tbsp ghee on a low flame
Add separated cashews and fry it to golden brown
Coconut Mix
In a tawa, take 1/2 cup of sugar and 1/2 cup of water and bring it to boil for 5 min (check the consistency should be thin, and not too thick). Keep the stove on a medium flame
Once the sugar syrup is slightly thick consistency, add coconut and saute for few seconds
Now add nuts powder and mix well and saute for a few seconds on a low flame
Add two tbsp ghee and add saffron, give a good mix and saute
Switch off the flame and take out from the tawa and transfer it to a plate
When still there is heat, split the mix into portions, add 1 or two roasted cashews and make mellows
Enjoy the yummy and delicious Coco Mellows !!!!
