Stir Fried Red Lentil Stew (Dal Fry) is a unique and yummy recipe and eNalabaag favourite one. This recipe is a mixture of all spice powders in the kitchen and will give a unique flavour. Prepared mainly with red lentil (masoor dal), veggies and ghee.

Making of Stir Fried Red Lentil Stew
Ingredients for Stew
Red lentil (masoor dal) 1 cup
Onion medium size 4
Tomato medium size 2
Ginger 1 inch
Garlic 5-6 cloves
Green chilli
Cumin seed 1 tbsp
Turmeric 1/2 tbsp
Pepper powder 1/2 tbsp
Red chilli powder 1 tbsp
Dhaniya powder 1 tbsp
Garam masala 1 tbsp
Sambar powder 1 tbsp
Rasam powder 1 tbsp
Salt to taste
Ghee 3 tbsp
Coriander leaves
Lemon 1/2
Sugar
Water
Cooking Red Lentil Dal
Take a pressure cooker and add 1 cup of red lentil, 2 cups of water, 1 sliced green chilli and a pinch of turmeric powder (adding chilli at this stage will add nice flavour to the recipe and unique way of eNalabaag's cooking method)
Let the dal cook well upto 5 whistles and switch off the flame
Let it get cool down
Red Lentil Dal Smash
Take out the dal and drain the excess water in a bowl and preserve for mixing (this water will have good nutritious value and can be used for other cooking process also)
Smash the drained dal nicely and keep it aside
Stir Fried Red Lentil Stew making process
Take a kadai, add 2 tbsp of ghee, add cumin seed and fry
Add ginger garlic paste and saute till the aroma goes off
Now add finely chopped onion and saute till it gets translucent, add salt and saute (adding salt at this stage will cook onions faster)
Add finely chopped tomato and saute till the sides of the tomato gets moisture
Now add turmeric, red chilli powder, dhaniya powder, garam masala powder, pepper powder, sambar powder, rasam powder, give a good mix and saute for 3-4 minutes on a medium flame
Now add the smashed Red Lentil Dal and stir fry for 1 minute
Add 1 cup of water at this stage and mix well, bring it to boil
Saute well and check for the taste and add salt if required
If the dal is too thick add little water and boil, then switch off the flame
Take out from the stove and squeeze half lemon and mix well (adding lemon while boiling will make the dish bitter)
Garnish with finely chopped onion, coriander leaves and 1 tbsp ghee
Note: Keep the sliced raw onions, lemon and green chilli and having with roti, pulka will give a divine experience (here added only onion due to non availability of lemon and chilli).
