Paneer Marinade Masala Rice

Making of Marinade Masala Rice


Main Ingredients:

  1. Basmati Rice 2 cups

  2. Paneer cubes

  3. Yogurt

  4. Coriander 1 cup

  5. Salt to taste

  6. Sugar 1/4 tbsp

  7. Kasuri methi 1/4 tbsp

  8. Pepper 1 tbsp

  9. Mint leaves 1/2 cup

  10. Red chilli powder

  11. Turmeric powder 1/4 tbsp

  12. Cloves 6

  13. Cardamon 2

  14. Pepper full

  15. Bay leaf 1

  16. Star 1

  17. Onion 2 medium size

  18. Cumin seed 1 tbsp

  19. Red Chilli

  20. Water


Paneer Marinade

  1. Take a tawa and add 1 tbsp oil and roast finely chopped onions (Barista)

  2. Take a bowl and add the following ingredients


  • barista(roasted onions, refer image)

  • Paneer cubes

  • Yogurt

  • coriander 1 cup

  • salt to taste

  • sugar 3/4 tbsp

  • kasuri methi 1/4 tbsp

  • pepper 1/4 tbsp

  • mint leaves 1/2 cup

  • red chilli powder 1/4 tbsp

  • turmeric powder 1/4 tbsp

  • cloves freshly crushed 6

Mix the Marinade very well and keep aside for 1 hour.


Boiling Rice

  • Add 1 tbsp oil to the boiling water

  • Add salt to taste

  • Once the water starts to boil add 2 cups of soaked rice (basmati rice)

  • Check the rice and if its about to get cooked switch off the flame and keep it aside (done over cook)


Making Paneer Marinade Masala Rice


  1. Add 2 tbsp of oil in a pan (pressure pan) and keep the stove on a medium flame

  2. Add 1tbsp of butter

  3. Add cumin seeds and saute

  4. Once they splutter, add cardamom, pepper corns, bay leaf, star anise

  5. Add 1 finely chopped onion and saute

  6. Once the aroma goes off add tomato and saute till the it gets moisture

  7. Add salt, red chilli, pepper powder, coriander powder, Garam masala, kasuri methi, turmeric powder, red chilli powder and sugar and saute till the sides get moisture

  8. Add coriander and mint leaves

  9. Add half a cup of water

  10. Add left over marinade which is kept aside and give a good mix

Layering the Masala Rice

  • Add layer of rice above the masala

  • Over the rice layer add the marinated paneer (Refer Image)

  • Add another layer of rice over it

  • Top the rice with raw or roasted cashew

  • Pour some water on top and close the lid

  • Let it stay in medium flame for 5 mins and switch to low flame and keep it for another 20 mins. Cover the rice with a lid

  • Switch off the flame now and keep it with lid covered for 20-30 minutes
